Description

For the production of our sparkling wine TRE.MA. the grapes are harvested in mid-September, when the Malvasia has reached a good ripeness and the Trebbiano Modenese, being later, has a marked acidity.

The grapes are rigorously selected and harvested by hand, to preserve the quality of the bunch.

Once harvested, the Malvasia and Trebbiano Modenese grapes are processed separately, carrying out a soft pressing that allows to obtain a high quality flower must.

Vinification method

The fermentation of Trebbiano Modenese and Malvasia musts takes place at a controlled temperature, so that there is a good extraction of polyphenols. Once the fermentation is over, during the winter we carry out various decantations avoiding filtrations. This allows us to keep the quality of the wine high, a fundamental activity in view of bottling. At the end of winter, the wine is blended by percentage cutting, using 80% of Trebbiano Modenese and 20% of Malvasia. In spring, with the April moon, it is bottled to start a natural refermentation in the bottle, with the relative second fermentation and slow aging on the lees.

Characteristics Land and Vineyard

Our Malvasia and Trebbiano Modenese vineyards were planted in 2004. They are located in the plain between the municipalities of Castelfranco Emilia and San Cesario sul Panaro, south of the Via Emilia not far from Modena. The rows were planted maintaining an orientation from north to south, to maximize the exposure of the bunches to the sun. The characteristics of the land are typical of the Modena area, being Franco Argilloso, with a good availability of water and organic substances. Ideal soil for the cultivation and production of grapes that will give life to very fresh wines and loads of extract.

Gastronomic combinations

Our TRE.MA sparkling wine is an excellent aperitif to be enjoyed between meals, ideal for a nice toast. However, it is an excellent accompaniment if enjoyed with desserts or small pastries.
