Description

Our Sauvignon Blanc grapes are selected and rigorously harvested by hand to preserve the quality of the bunch. The harvest takes place at the end of August, when the grapes are fully ripe so that the aromaticity of the vine is fully enhanced. Once harvested, our Sauvignon Blanc grapes are left to rest in the cell for 24 hours, to start a whole cluster “maceration”. They are then inserted directly into the press to be processed. A soft pressing is carried out while maintaining the structure of the grape seeds unaltered and in order not to crush the stalks, a method that allows to obtain a high quality flower must.

Vinification method

The fermentation of the Sauvignon Blanc must takes place at a controlled temperature, so that a good extraction of polyphenols takes place from the must. The refinement takes place at first in ceramic tanks with prolonged stops on the noble lees, after which it ends its evolution for 10/12 months in “clayver” ceramic containers which thanks to a natural micro oxygenation lead to maturation our Sauvignon.

Characteristics Land and Vineyard

Our Sauvignon Blanc vineyard was planted in 2004. It is located in the plain between the municipalities of Castelfranco Emilia and San Cesario sul Panaro, south of the Via Emilia not far from Modena. The rows were planted maintaining an orientation from north to south, to maximize the exposure of the bunches to the sun. The characteristics of the land are typical of the Modena area, being Franco Argilloso, with a good availability of water and organic substances.

Gastronomic combinations

Formidable with hot and cold fish starters, also steamed, fish tartare-carpaccio, oysters, but also with cold cuts and salami. It goes well with any first and second courses based on fish and shellfish, even stewed, white meats such as veal, chicken and rabbit, eggs, asparagus and omelettes with wild herbs.
