Description


Our Sauvignon Blanc grapes are selected and rigorously hand picked to preserve the quality of the bunch.

The harvest takes place at the end of August, when the grapes are well ripened so that the aromatic quality of the grape is fully exalted.

Once harvested, our Sauvignon Blanc grapes are left to rest in the cell for 24 hours, to start the whole cluster “maceration”.

They are then inserted directly into the press to be processed.

A soft pressing is carried out while maintaining the structure of the grape seeds and without crushing the stalks, a method that allows to obtain a high quality free-run must.

Land Features


Our Sauvignon Blanc vineyard was planted in 2004.

It is located in the plain between Castelfranco Emilia and San Cesario sul Panaro, in the south of Via Emilia, not far from Modena.

The rows have been planted maintaining a north-south orientation, to maximize the exposure of the bunches to the sun.

The characteristics of the soil are typical of the Modena area, clay-loam type, with a good availability of water and organic substances.

Vinification Method


The fermentation of the Sauvignon Blanc must takes place at a controlled temperature, to guarantee a good extraction of the polyphenols from the must.

The aging initially takes place in ceramic tanks, resting on the noble lees, to then finish its evolution for 10/12 months in “clayver” ceramic containers which, thanks to a natural micro-oxygenation, lead our Sauvignon to good aging.

Gastronomic Combinations


Formidable with hot and cold fish appetizers, even steamed, fish tartare-carpaccio, oysters, but also with sliced meats and cold cuts. It goes well with any first and second course based on fish and shellfish, even stewed, white meats like veal, chicken and rabbit, eggs, asparagus and omelettes with wild herbs.
