Description

The Grechetto Gentile grapes are harvested from the plant and rigorously selected by hand in the first days of September. The choice of the harvest period is important, as harvesting the grapes at the beginning of September preserves a good acidity of the grapes. As soon as they arrive in the cellar, the whole bunches are inserted directly into the press to be processed. A soft pressing is then carried out, taking care not to break the pips and not to crush the stalks, to obtain a high quality flower must which will then be taken to the cellar to vinify our Pignoletto Spumante DOC Modena.

Vinification method

For the vinification of our Pignoletto Spumante DOC, we carry out a first fermentation in stainless steel tanks. A slow and temperature-controlled fermentation is carried out to maximize the extraction of polyphenols. During the winter, we carry out various decanting, avoiding any type of filtration to keep the quality of the wine high, a fundamental activity in preparation for bottling. Once bottled, the subsequent refermentation in the bottle takes place, with the relative second fermentation and slow refinement on its own yeasts, following the dictates of the “Classic Method”. After a slow aging of 20 months, the yeasts are removed by “degorgement”, or disgorgement. It is carried out by placing the bottle at the tip and subsequently opened at the Volèe without freezing the neck of the bottle.

Characteristics Land and Vineyard

Our Grechetto Gentile vineyard was planted in 2003. It covers 3 hectares located on the plain between the towns of Castelfranco Emilia and San Cesario sul Panaro, south of the Via Emilia not far from Modena. The rows were planted maintaining an orientation from north to south, to maximize the exposure of the bunches to the sun. The characteristics of the land are typical of the Modena area, being Franco Argilloso, with a good availability of water and organic substances. Ideal soil for the cultivation and production of grapes that will give life to very fresh wines full of extract, such as our Pignoletto Spumante DOC Modena

Our Cento7 Spumante Metodo Classico – Extra Brut is a very versatile wine, suitable for any type of meal. It is also suitable for a good aperitif in company, thanks to its elegant and fresh characteristics. It is exceptional when paired with appetizers and crudités, or in any case with a good light meal. Ideal for very delicate first courses and second courses based on fish.
