The Grechetto Gentile grapes are harvested from the plant and carefully hand selected in the first days of September.

The choice of the harvest period is important, as the harvest of the grapes at the beginning of September preserves a good acidity of the grapes.

As soon as they arrive in the wine cellar, the whole bunches are inserted directly into the press to be processed.

Then a soft pressing is carried out, taking care not to break the grape seeds and not to crush the stalks, to obtain a high quality free-run must that will then be taken to the cellar to make our Pignoletto Spumante DOC Modena.

Land Features

Our Grechetto Gentile vineyard was planted in 2003.

It extends over 3 hectares, located on the plain between Castelfranco Emilia and San Cesario sul Panaro, in the south of Via Emilia, not far from Modena.

The rows have been planted maintaining a north-south orientation, to maximize the exposure of the bunches to the sun.

The characteristics of the soil are typical of the Modena area, which is clay-loam soil, with a good availability of water and organic substances.

It is the ideal soil for the cultivation and production of grapes that will produce very fresh and extracted wines, like our Pignoletto Spumante DOC Modena.

Vinification Method

For the vinification of our Pignoletto Spumante DOC, we make a first fermentation in stainless steel tanks.

A slow and temperature-controlled fermentation is carried out to maximize the polyphenols extraction.

During the winter, we carry out various decantations avoiding any type of filtration to keep the quality of the wine high, a fundamental activity in preparation for the bottling.

Once bottled, the subsequent re-fermentation takes place in the bottle, with its secondary fermentation and slow aging on its own yeasts, following the dictates of the “Classic Method”.

After a slow aging of 20 months, the yeasts are removed by “dégorgement”, or disgorgement.

It is carried out by placing the bottle down on its tip and then disgorged à la Volée without freezing the bottle neck.

Our Cento7 Classic Method Sparkling Wine – Extra Brut is a very versatile wine, suitable for any type of meal.

It is also suitable for a good aperitif with friends, thanks to its elegant and fresh characteristics.

It is excellent when paired with appetizers and crudités, or with any good light meal.

Ideal for very delicate first courses and fish-based second courses.
