Description

Our Grechetto Gentile grapes are selected on the vine and rigorously harvested by hand to preserve the quality of the bunch.

The harvest takes place in the second decade of September, when the grapes are fully ripe so that the characteristics of the vine are fully enhanced.

Once harvested, the Grechetto Gentile grapes are left to rest in the cell for 24 hours, to start a whole cluster “maceration”. They are then inserted directly into the press to be processed.

A soft pressing is carried out while maintaining the structure of the grape seeds unaltered and in order not to crush the stalks, a method that allows to obtain a high quality flower must.

Vinification method

The fermentation of the must of Grechetto Gentile takes place at a controlled temperature, so that a good extraction of polyphenols takes place from the must.

Aging takes place inside steel barrels with a long elèvage sur lies.

This procedure takes place by making a prolonged pause on the noble lees of the must, thus obtaining a much more intense aromatic bouquet.

Characteristics Land and Vineyard

Our Grechetto Gentile vineyard was planted in 2003. It covers 3 hectares located on the plain between the towns of Castelfranco Emilia and San Cesario sul Panaro, south of the Via Emilia not far from Modena.

The rows were planted maintaining an orientation from north to south, to maximize the exposure of the bunches to the sun.

The characteristics of the land are typical of the Modena area, being Franco Argilloso, with a good availability of water and organic substances.

Ideal soil for the cultivation and production of grapes that will give life to very fresh wines and loads of extract.

Gastronomic combinations

Our dry Pignoletto Modena Doc is a wine that pairs happily with light dishes, such as lean appetizers, raw fish.

It is also ideal if tasted together with risotto, mushroom dishes and white truffles.

Tasted together with main courses such as white meats, grilled and baked fish, they enhance the flavor.
