Our Lambrusco Grasparossa grapes are harvested manually by selecting only the best bunches. The harvest takes place within the last ten days of September, so that the grapes can reach optimal ripeness, both of the pulp and the skins. Once in the cellar, the Lambrusco grapes are crushed-destemmed so that the seeds do not alter the must. It is then left to macerate with its skins at a low temperature, from 7 to 10 days, periodically carrying out pumping over to allow maximum extraction of color and tannins. At the end of the maceration period, the must is racked off through the soft press, which separates the liquid part from the pomace, and then returns to the cellar to carry out the first fermentation.

Vinification method

In the cellar, after maceration on the skins, the fermentation of the must is induced, strictly at a controlled temperature. This process allows a better extraction of polyphenols. We do not wait for the natural fermentation to end; it is interrupted so that the must maintains a significant sugar residue. It is then directly bottled, so that a second natural refermentation takes place directly in the bottle, following the dictates of the “Ancestral Method”. Fermenting inside the bottle, the second fermentation begins and slow aging on its own yeasts, without opening it for 15 months. However, it is a wine that, thanks to the presence of yeasts inside the bottle, continues to evolve over time, revealing increasingly complex characteristics.

Characteristics Land and Vineyard

Our Lambrusco Grasparossa vineyard was planted in 2001. It is located in the province of Modena, between the towns of Castelfranco Emilia and San Cesario sul Panaro, south of the Via Emilia. The rows have been oriented following a line from north to south, so that the vines can have an optimal exposure to the sun. The soil of the vineyard is of the Franco Argilloso type, characterized by a good availability of water and organic substances.

Gastronomic combinations

Our Lambrusco Grasparossa Luna Nera is a soft and harmonious wine, with which it can be paired with salami-based appetizers, aged or blue cheeses. Remarkable even if tasted together with an excellent plate of tortellini, pumpkin tortelli, typical Emilian dishes. Also with second courses such as boiled meats, roasts and grilled meat it goes very well.
